So my wife and I went to Costco last weekend and picked up some pork chops. Needless to say, we now have more pork chops than anything else in our freezer :). Last time we were in this situation we got so tired of the same old grilled pork chops we ended up throwing some out to make room in the freezer for things we actually wanted to eat.
I'm hoping to avoid doing that this time, so does anyone have any good recipes to spice up our pork chops? Any recommendations are greatly appreciated!

Well the Dry rub recipe I mentioned in the BBQ thread: http://www.cockytalk.com/showthread.php?t=81492 goes great with pork chops.
You could also dip them in egg then bread crumbs and fry them.Serve with some nice veggies and potatoes, and you're all set.
If they are thick enough, you can also try stuffing them. Just take a long, thin knife and create a little pocket in the sides of them and insert the filling with a turkey baster.
You could also chop the pork into small bits and make some pork fried rice.
If you have a meat grinder or even just a food processor, sausage isn't very hard to make.
If you have a slow cooker, this recipe could be of interest: http://www.foodnetwork.com/recipes/alton-brown/slow-cooker-pepper-pork-chops-recipe/index.html

Get some jack daniels and bbq sauce. Make a 1 to 1 mixture. Marinade on one side for 24 hours. Repeat for other side for a total of 48 hrs of marinating. Grill that sucker afterwards and you will have one of the sweetest porkchops you have ever eaten. Works real well with sirloin also.

I grill pork chops all of the time... thick cut if I can get them. I coat both sides of each chop liberally with Cavender's seasoning then poke holes all over each side to force some of the Canvenders in. Then I place the chops and the seasoning in a large freezer bag and pour a bottle of Dale's seasoning in... or enough to make sure the chops are covered. I let this sit in the refrigerator for no more than about half an hour (the longer it sits in there the saltier is gets) then take out and grill on low heat (lower the better to keep it juicy) until done.

Make sure the Jack makes it into the marinade. LOL

Thanks a ton fellas. Can't wait to try out a couple of these this week. Specially since I'm sitting at work about to eat one of those healthy request steamers for lunch. Just FYI - be careful saying "I'm going to drop off a steamer in the microwave" when you're at work :)

If you like a sweet taste, put 6-8 chops, that have been poked with a fork, in a gallon bag or tupperware container to marinate with:
Apply Cavender's and garlic powder liberally
1 can of crushed pineapple
1 Tbs. ginger
1 200 ml. Malibu Coconut Rum
4-5 Tbs. of Soy Sauce
Marinate overnight, slowcook on the grill over low heat. You can use the same recipe for skinless chicken thighs(real cheap to feed a crowd) and wrap with bacon before grilling

I fried some with panko bread crumbs tonight. They were pretty good. Seasoned with salt, black pepper, garlic powder, cayenne pepper, and a bit of cumin.
