A little extra kick to a burger that we've been doing for a little while now.

Re: Outside In Burgers
Next time you do burger's try smoking them with charcoal and hickory. I wouldn't do them any other way.

Re: Outside In Burgers
I tried these last year when I saw the Juicy Lucy burgers on Triple D. I only used cheese, but all the stuff you added looks good as well. I was told to make an indention on the top of the patty so that you don't get a burger nipple when it cooks, but this also caused some cheese leakage near the end.

The thumb print/indention is to help the burger cook more evenly. We do them sometimes, and other times we don't. Honestly, I don't now that I've seen a difference between doing it and not (minus a big thumb print in my burger). I guess when you're filling the middle, the indention is good because it thins the patty out right there. |
Re: Outside In Burgers
It keeps the burger flat too. No more curling up around the edges.
