Don't bother gambling in any casino other than Bellagio. It's always best to just stick to the hotel casino where you're staying. They keep track of your gambling and you can get better comps based on how much you gamble. Table minimums will go up after about 10pm - watch out for that.

You can spend a fortune in food if you're not careful. I'd recommend one, maybe two, nicer dinners. Otherwise I'd hit up the grocery store or just eat at a fast food joint.

Also a week in Vegas is a long time honestly. Pace yourself. When the guys and I do our 3-4 day trips to Vegas, it's basically just one long day with mini naps here and there. It may be different with your wife on your anniversary - but I doubt it. Ha.

Take a day and visit the Hoover dam. It's a nice change of scenery from the strip.

I also enjoy Fremont St just as much, if not more, than the strip. It's old school Vegas.

The Wynn hotel has a Ferrari dealership/showroom that's cool, if you're into cars.

Do a show but I wouldn't do more than 2 shows honestly. The Tim McGraw/Faith Hill show is good if you happen to be there when they are doing it.

Don't bother golfing - their really isn't any decent golfing in Vegas. Kind of a waste of money to me (and I'm an avid golfer).

Take your wife to the Forum Shops right by Ceasars Palace. You can just about spend an entire day there shopping if you want.

Also, take her to the Venetian to just walk around or do a gondola ride. It's the most impressive hotel in my opinion. You'll feel like you're outside in Paris when your really on the second floor of a hotel - pretty amazing.
