    Default Grilling Chicken Tonight

    Going to grill some chicken tonight and either make some mash taters or bake some taters. Wife will most likely put her touch on it and do her baked beans and they are great.


    Anybody else doing the cook-out thing tonight/today?

    Did the Chicken last night with bell peppers on the grill. I used the jimmy Buffet Jerk marinade. It was pretty good but I think the Chili lime one is better.

    I have a couple of chicken breasts to cook but I'll most likely freeze them. Wife is out of town tonight, I want to go to they gym after work, care for my dog who is recovering from being neutered..... tonight sounds like a Chipotle night!

    Sunday night - grilled chicken- (herbs) with butter beans, tomato and avocado, lightly picked cucumber and vidalia, and corn. Grilled peach soaked in rum for dessert
    under a coconut tree!

    Did my first pork ribs today..they were awesome. I oiled, rubbed and put them in the oven for 3 hrs at 300 degrees.

    Then I put a brown sugar and apple juice coating on and individually wrapped them in foil.

    Put the gas grill on med and cooked them for another 45 min..then I basted them in bbq sauce and let them cook for another 15 min.

    Grilled white; oven baked dark. We have a saying in the Bahamas- the darker the berry, the sweeter the juice. Lot's of people like dark meat
    under a coconut tree!
