There isnít much better than homemade collards, but if youíre in a pinch,Glory brand canned southern style collard greens will do - quite yummy.

I love all greens Ė collards, mustard, turnip, kale Ė but collards ismy fav.

I went to Hank's Seafood in Charleston, SC a couple of weeks ago and they served them with their seafood entries/dinners and I have to say that they make the best that this ole boy has ever eaten - I have tasted a lot of collard greens in my day.

So, how many of you great cookers are going to be serving up a big mess of collards greens at Thanksgiving this year?
I think that Hanks and Peninsula Grill have the same ownership. Peninsula had my favorite collards for years. They make a rich ham stock and braise them in the stock. It bet Hanks uses the same recipe.

I use a recipe I found online a while back and ever since then I'm responsible for bringing the collards to Thanksgiving. lol

I love the flavor but I add a little less crushed red pepper b/c most people don't care for the spiciness (some do though)

You add your sugar at the beginning or wait until it's nearly done?

Collards are my favorite greens with spinach a very close second. I use bacon or ham to season them and drizzle a bit of bacon grease just prior to serving (a tbsp or two).

Tried to grow some this year but they didn't make it.

Hard to find in this part of the world but I love them.

Pintos (well Anasazi beans here), collard greens and corn muffins and I'm in Heaven.

I keep a bag of seasoning veggies in the freezer just for stuff like this. Throwing a bunch of that (onion, peppers, celery) into the pot gives it more depth of flavor.

At the Cracker Barrel they have a selection of "Beans and Greens" which are pintos and collards. It's what my mom gets every time!

I also eat turnip greens, which to me has a similar taste to collards, but on a milder scale, so I tend to eat more of them.

I still need to try spinach, which is VERY nutritional, but not too many in my family eats spinach much, so I haven't had the opportunity yet......
If you want an easy way to intake spinach and receive the health benefits, just add it to a fruit smoothie. You won't taste a thing but will receive the nutrients.

I always liked lettuce for salads, and will eat any type of bean or pea, but always withdrew from cooked greens when I was younger. I guess I am weird in that regard: I can eat raw cabbage, but don't like it cooked, and prefer raw carrots to cooked carrots too.

Recently I ate at the Sea Captain's House restaurant: I ordered crab cakes, and the side dish was a mixed vegetable that included zucchini and green beans cooked with onion. I never ate zucchini before, but ate some of it trying to eat the beans around it, and the zucchini tasted just like the beans, so I ended up eating all of it.

I hate going out to eat at some restaurants because the main entre dishes always involved the same kind of mixed veggies that included zucchini or squash or Brussels sprouts - something like that, so I can eat the meat and potato, but leave the veggies all the time. At least I get a salad and eat that....
As for an easy way to prepare and enjoy kale.... cut the leaves away from the stem and do a rough chop on it. Dress with some olive oil, salt, and pepper and bake for about 10-15 minutes at around 400.

They come out crispy and delicious.

Sauteed spinach, creamed spinach are both outstanding. Creamed spinach might not be the healthiest. I can even eat the canned spinach with a little bit of vinegar. Love spinach. I like collards too and pretty much any green

My friend, you don't know what good cooking is. To each his own, but you can't be Southern and not like collard greens.
