    Default Pig Head

    I was watching a real estate show and a girl from Michigan was having a family dinner before gong away. They had cooked a whole pig and gave her the head to eat. The eyes staring at you. YUCK!!!!

    I know that in the South - people use the pig head to make the hash out of as they boiled down everything but the squeal.



    I don't know about eating a hog head straight. I have seen food shows where they would have a hog/with the head still attached and ready to be served, but I did not see anyone eating it.


    I with you about eating a hog head straight up. Might have eaten plenty as they were mixed in with BBQ Hash, but that is something you don't see looking back at you.

    I was born and raised in SC. My people on Mom's side too. Don't remember getting anything but fatback daily and sharing small chicken on Sunday between 8 of us - Mom, gran and 6 kids.

    Authentic barbacoa (Mexican BBQ) uses a lot of the head meat, tongue, brains, eyes etc etc.

    I wouldn't do the eyes, would try tongue, not sure about organs ... everything else, filler up.

    Cack, I know a lot of the old timers used to put just about everything in their pots while making hash. I think that everyone that lived through the hard times of the depression learned to eat just about everything that would not make them sick. My granddaddy on my mother's side of the clan would catch and feed a possum for several weeks with one of his buddies to clean it out and then they would cook it and eat it. I did not ever eat any of it, but do remember that my grandpa's breakfast plate at his house would have some very interesting things on it at different times.
