    Frank, which machine are you getting? I still enjoy mine. I have also been using my Instant Pot more and have recently been using my air fryer too. BTW, that pizza oven of yours should be excellent for searing!

    Got a Joule 1100 watts. Going to do some lamb chops this weekend. Can't wait to do a chuck roast and get involved in this thread. Pizza oven would be good, it would be and fast and cheap. Nobody on the island carries pellets so I have to import them - got 100 lbs coming in soon. How ya doing Yancey?

    Didn't do Lamb chops, weather too nice so fired up the grill. But I did sous vide a sirloin last night - my first. Took 16 oz, 1.5" thick sirloin in a food saver bag, seared it first, added shallot garlic S & P and did 129 degrees for 1.5 hours. Seared again in butter at 550 degree cast iron skillet with Stilton mashed potato, saute of red onion and zucchini, green salad, mushrooms with shallot sauce. Berringer reserve Cab - Perfect temp - med rare- but not impressed. MUCH prefer charcoal/wood fire grilled. Maybe a chuck roast or lamb shanks but for me no big deal.
