OK, they are not nearly as tender. They need a marinade to help. I like traditional Greek type ones. Lemon, rosemary, and garlic are big. EVOO of course. Here is one recipe: http://www.foodnetwork.com/recipes/f...ipe/index.html

thanks, ive had leg of lamb, shanks, and rack of lamb but never shoulder. it was on sale so i decided to give it a try
