It's pretty easy. Although you may want to forgo the injection in favor of a brine to avoid any bursts of liquid into the hot oil.

I always smoke two turkey breasts for our Thanksgiving and Christmas Family Dinners. Everybody loves them and I usually don't do a turnkey breast over about 5 lbs.
My brother-in-law deep fries a turkey and it is awesome for about three hours or until it starts getting greasy, kind of like fried fish after they have been cooked several hours later. Smoking a turkey breast, the meat is even better the next day and the day after if you still have any left. It is a little bit of work, but everybody loves for me to do them each year. ![]() |

smoked one this year myself, everyone commented on how delicious and juicy it was. We made sandwiches and turkey salad the day after. I used Alton Brown's recipe which calls for a brine for 24 hours, and 4 hours smoking, but it didn't make it that long. it was done in 3 1/2.
