That is a very interesting receipe. I'll have to try those for the kids and I. I cook steak once a week and that would be something different to have than a regular ole baked potato.

I saw a armadillo cross the road this morning on the way to work. Their population is starting to explode in SC according to the DNR.

Hasselback Potatoes use the same cutting technique, but only use butter and salt as the ingredients. What Cack has done is a recipe that is common in the BBQ world and known as Armadillo potatoes, the crust being similar to an armadillo's leathery shell (aka Accordion potatoes also)

I'd like to try this with a good homemade pesto (perhaps with some spinach in the pesto to protect the color under a broil), and since the crusty outside seems to be part of the attraction, maybe top it with a layer of parm, oil, and bread crumbs before putting under the broiler. I'm always looking for new ways to put pesto all over potatoes.
