I'd go light on the wood. You don't want to smoke it so much as you want to replicate cooking it over hard wood.

Cack, you can also buy unglazed quarry tiles and put on your grill as well. This and real light smoke really does a good job of replicating a wood fired brick oven. That pizza looks really good.
Also, throwing a bit of cornmeal on your prep surface will help keep it from sticking.

corn mill works perfectly ... just some how some moisture got in there. (i think my fiancee put too much oil on the crust when she added the parmesan and it got under the dough)

Try using Boar's Head meat and chesses next time. Get the deli people to slice the meat and cheese to your desired thickness. It really takes it to the next level.
