Default New Smoker

A father's day gift I've needed for a long time.

I'm giving her a good seasoning now.

Yeah my old one, which was just a little $30 dome model I bought at walmart, lasted me a good couple of years before finally falling apart. I had been eyeballing one like this for a while since it has so much more room than what I had before. I think tomorrow, I'll put it to the test with some chicken, sausage links, stuffed peppers, and maybe some potatoes.

I have the same model. You'll be very happy. I did make
Some modifications that I did that I reccomend you do:

Change out the temp gauge on the outside:
https://www.amazon.com/dp/B001P9J3GM..._RF9rzbZJM6PMX

Add firetape around the outside of the box To seal it better. Mine had a few gaps that let smoke out

Add a second and third latch to the top box. Same reason as above.

I got all of this on amazon. Pair it with a dual probe wireless thermometer and you're going to be a pro on day 1

Craig, although we have different brands of smokers the Bradley recipe forums will give you some great ideas for smoking stuff in your Masterbuilt.

Thanks for the replies, folks. This isn't exactly my first time around a smoker, but I appreciate the tips nonetheless. BTW Yankee, yeah the first thing I did was grabbed a better thermometer. The ones that come with most smokers are crap anyways. What I did while I was seasoning was take temp readings at various locations within the box using an oven thermometer. It helps verify the accuracy of the installed one as well as illustrate the hot zones. It's very handy information.

As for the other modifications, those are good but I am thinking of another one for this model. I'm thinking of finding an ill-fated cast iron pan to hold the wood chunks. I did my dry run as the manufacturer intended, and I didn't really care for the ash kick-up. So today while I was cooking with it, I tried the old aluminum foil smoke bombs. Those worked ok, but the aluminum stuck to the fire plate.

Other than that, it seems to be a rock-solid smoker. I did a rack of ribs (cut in half so they would fit), some locally made bratwursts, a couple of potatoes, and some stuffed peppers. I used one of the racks to hold an aluminum pan to catch the drippings. (I like containing the mess when I can.) After the cooking, the unit cooled within an hour, and cleanup was minimal. I would have to see how she stands the test of time, but so far I recommend this model for pretty easy smoking. My previous model required a lot of hand holding, and this one was almost set it and forget it.

Not sure if it'll fit, but I recommend the cold smoker box attachment...it fits right into the soda can sized hole where the wood chips go (at least in my electric Masterbuilt smoker). The problem with these smokers is that they only produce smoke when they produce heat, and on a hot day, that's not as much as I'd personally like. The cold smoker attachment constantly produces smoke though and doesn't heat up the inside of the smoker. It's also easier to clean imo, and might also be the solution to your ash issue. I think it was about $50 when I got mine. I'm going to try my hand at smoking cheeses and perhaps some salmon this fall/winter. Might even try making some smoked paprika if I can find the seeds for the right peppers to grow, but that's likely getting too ambitious.

I have a cold smoker attachment for my Bradley. It lets me move the smoke generator from inside the oven to several feet away. Don't know if that can be rigged to fit the Masterbuilt or not.

I put an oven rope gasket on the door seal of my last vertical smoker and it made a massive difference in maintaining heat. FWIW.
