Default Pork Rub

I heard Johnny Triggs (Bar-B-Que Pit Master) speak on one of the Kingsford Charcoal Pit Master cook-offs that he prefers to just buy a pork rub as there are a lot of them out there on the market now and he knew he could not make one that was better or cheaper than what he could buy and just went in that direction.



Now that being said, what do most of you serious "Pork Cookers" do when you are cooking pork? Do you make your own or do you buy one?



My personal experience has been to just do my own thing, but I did purchase one with the advice from a friend who does a lot of cooking of pork and beef and I got to say it was not only a tad bit expense, but it had a little bit more heat in it than I would normally put onto my pork.

Personally I've tried a few, Bad Byrons is up there for me, but I usually make my own.


There's one for chicken I learned that is absolutely unbeatable in my opinion, but I guess that's for another thread.

I've made my own, but I've found a few that I just can't miss.

Pork
Ployboy's Yardbirds (#1 favorite rub) I buy it by the 5lb bag (which reminds me I ran out this past weekend)
Moe Cason's Pork Rub
Big Poppa Smoker's "Money"

Beef/ Steak
The Rub Co. Santa Maria
Big Poppa Smoker's Double Secret Steak Rub

Brisket
Oakridge Black Ops

For heat
Oakridge Habaneo Death Dust (a little goes a long way)

Everything
Big Poppa Smoker's Bacon Jalapeno Rub (this stuff is off the damn chain)

Now this is going to seem weird ... but the team sets that you can get on Amazon (link below) are all amazing. You wouldn't think that this generic rub that they made to just throw some logos on to sell would be that good, but I've ran through every single one of these bottles and, like my Yardbirds, have to order some more.

I make my own. I've tried some of the premade ones, and none of them are all that great to me. Maybe I've just not found a good one yet, but I'm happy with my 8:3:1:1 concoctions.

I make my own sometimes but most of us do not use enough of each individual ingredient before they begin to lose some potency. That is the value in pre mades even if takes away some of the adventure. Penzey makes some excellent rubs and spices. "33rd & Galena" and "Ozark" are both excellent with pork. https://www.penzeys.com/shop/spices/

Check out Malcom Reeds rub from killerhogs.com. The BBQ rub hot version is money. Little sweet a little bite is great on all pork and chicken. Check out his YouTube channel "howtobbqright" all kind of good ideas and new ways to prepare meats.

Killen’s BBQ (Pearland, TX) has the best BBQ I’ve ever eaten in my life. They also sell some of the best all purpose rub. The most prevalent flavors in this rub are black pepper and smoked chipotle, and it works on anything. I usually add more black pepper to brisket, but it is great as is.

I've only started since last August but have since tried about 7-8 different rubs. To be honest, I can't hardly notice a difference in any of them.

That being said, I try to avoid the ones that have salt listed as the first ingredient.

Interesting, Butt Rub is pretty much the only one I've ever tried that I really don't like. I bought a ton of it from Sam's or Costco and now I'm stuck with it. Every time I cook with it, I just end up disappointed. Everyone else compliments me on the cook, but I've just never been happy with it.

Good for you. Too much dependency on salt is a mask for a poorly balanced rub. The purpose of salt in a rub is to bring out the flavor of the other spices and should not be predominant.

I've tried several good commercial rubs. As mentioned previously, Penzey's has a lot of experience in spice blends of all kinds. Though, I make my own most of the time, and through experimentation, have settled on some favorites.

My favorite for butt has paprika as the dominant base (not salt).

While I make my own (mix of dark brown sugar, white sugar, paprika, black pepper, ground mustard, salt, garlic powder), there are some very good commercial ones -- if you find one you like, go with it!
