Ya I was wondering when yancey said "your butcher". I just go to foodlion and get what's on sale. I went to Costco Saturday and they had a decent one but it was 5.99/lb. I didn't know if that was high or.not

You don't have to worry about meat grade as much when buying brisket: it will always be a tough piece of meat best suited to slow coking via braising or done Texas style which I assume you are shooting for. Still, you will get a better result from a high end piece of meat. I didn't mean gourmet butcher. Just ask the meat man at your local Publix, Hoggly Woggly, etc to order you a nicely trimmed one.

Actually Cack i slow cook my ribs and they are rubbed in a old memphis bbq recipe (that i bought off a lady while in memphis, wouldnt give me the recipe just gave me a large container of the rub) with a natural honey glaze.
