Bump
Need seasoning ideas.. I got some gruyere cheese and I'm thinking of cutting it down to small pieces and mixing it in with the meat. I also got some avocado to slice up and put on top. |

I would go with a regular burger but use Boar's Head Buffalo cheese. Make a sauce of ranch dressing with blue cheese and some Sirracha. As a side serve celery sticks with a blue cheese dip in the crevasse. I would go with ciabatta buns for the burgers. And, ahem, TONS of onions!

I honestly wouldn't get crazy with seasoning. The buffalo meat I've had has always had good flavor. I would go with some salt and pepper and don't over cook it. Some grilled onions along with your gruyere would be good I would think. Beyond that, get some quality bread and you should be good.
I've had gouda cooked inside of a buffalo burger, that was pretty good.

Well then, just ignore my previous comment.
![]() The good news is that buffalo is very lean. The bad news is that buffalo is very lean. Lean meat does not = a juicy burger. Here is the solution. Take about 4 pats of butter per pound. Freeze them. Chop those into very small pieces. Refreeze. When ready to cook the burgers mix the butter pieces into the meat and then form the patties as normal. Season as you like. As they cook the butter will melt and keep them nice and juicy. Warning: If grilling keep a water spray bottle handy. You WILL get flare ups from the butter drippings.
