Thumbs down My Failed Bacon Wrapped Shrimp

Almost everything that could have went wrong did

Before they went on the grill ... looking nice



Even tried the indirect heat it called for.



I ended up having to turn the heat up a bit to get them to cook ... and it was still just a mush of bacon fat. Half of the toothpicks fell out ... it was just a mess.



I couldn't even get a good looking pic for the finishing touch.

The bacon you used looks like it is very thick. You'd might have better results with a thinner cut or even trying prosciutto or pancetta.

You have to par-cook the bacon, then let it cool again before wrapping it around the shrimp.

If you can, par cook it on a raised grill sitting inside a cooking sheet, that'll catch the fat below but let the bacon cook sitting outside of the fat. You don't want to get it too cooked, it needs to still be flexible. I'd say about 10 minutes in a 375 oven would do the trick.

Forgot to add, once you've done that, you can cook with the goal of browning the bacon without much fear of overcooking the shrimp.

Both the above are correct. Thin and partially cooked bacon helps. I have had better success cooking under the broiler for 8 minutes flipping once or searing in cast iron for 30-45 seconds each side and baking 8-10 minutes at 350/375.

My aunt makes killer sweet and spicy bacon shrimp. Takes maple bacon and brushes with sriracha then wraps the shrimp. Yum

what the heck is par-cook?

I put it in the oven at 375 or whatever for 15 minutes before I put them on the grill

Half way cook bacon before you wrap the shrimp. Allows you to not to over cook shrimp trying to get bacon done

I buy paper thin bacon when I cook things like this. A half rasher works just fine. I also put them on the bun warmer and fire up burners on either side. A disposable tin pan underneath them catches grease drops. Works well with the ATBs and it should with the shrimp as well.

This may sound sinful to you as you appear to bacon most everything, but grilled shrimp if done correctly doesn't need it. I love bacon and I love shrimp, just don't see a need to combine them. Venison tenderloin wrapped bacon and grilled is yet another thing. Those go very well together.

Try them on a skewer as opposed to individual. That is the way we grilled them at the restaurant

same goes for scallops. Cooking Shellfish and calamari is a lot about not overcooking them. The bacon takes longer to get up to temp then most shellfish, so pre-cooking it to the point that there's noticably color change but you haven't lost elasticity is key.

Also with bacon wrapped dishes, remember that the interior product will continue cooking even after you pull it off the grill, due to the hot grease/fat surrounding it. So serving immediately is a must.

(Although, if you don't want all of that Prep, a quick fix is just seasoning it with Emeril's Original Bam before wrapping it in bacon. That cuts down on more than half of the prep time.

It doesn't look half bad at all...i'm sure it was still yummy. You can be the greatest cook in the world but you still learn how to do something better everyday. It may take a few times to get it right...we could be the test tasters...LOL

With shrimp you want the bacon almost all the way cooked! Shrimp only takes about 4-6 minutes to cook which isn't near enough time for the bacon!

The best way I have found to do these is to cook the bacon (I use a thick-cut apple wood smoked variety) at 400 for about 18-20 minutes. Then, while the bacon is still hot (but not too hot, obv), go ahead and wrap the shrimp and skewer/toothpick them. Place it on your grill withing 2-3 minutes. This keeps the fatty part of the bacon hot and allows it to begin to cook again as soon as you put it on the grill. The meat of the shrimp is far less dense than the bacon fat, so it will heat up and finish cooking way too fast if you allow the bacon to cool.

Also, as a side note, I highly recommend brushing these with a butter and pureed peach mixture about 2 minutes before they come off the grill.
